3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food; Hot and Cold Holding (P) Cooked onions from yesterday stored in container stacked on top of other containers in flip top prep table and at 42F. Raw burgers stated to have been in the grill drawer since last night 41-42F. Exterior display of unit consistently around 44-45F. Food shall be 41F or less. Employee voluntarily threw away the onions and stated that he was making new ones for today to hot hold on the grill. Store food either in the prep table grid or in cabinet of unit. Do not stack containers on top of each other. Trash can between fryer and grill drawer unit blocking part of the vent for the unit; was relocated and the exterior digital display rapidly decreased to 38F. Do not store items blocking the vent. Single service items shall be stored in a clean; dry location and protected from contamination. Clean caddy that the unwrapped plastic ware is in and use a washable food container for the unwrapped portion cups in place of absorbent; un-washable cardboard. 4-502.13 Single-Service and Single-Use Articles - Use Limitations (C) An empty commercial honey mustard container that has been washed was on clean dish shelf and PIC explained it is reused to make a sauce in the container. Single service items are not allowed to be reused. Once the original product is removed from the container; discard the container/packaging. Make the sauce in a food service container that is designed for commercial reuse.
