3-501.16 (A)(2); Priority; (1)Cut tomatoes on prep table were in an ice bath at one point but ice has since melted and were holding at 43F-52F (diced) and 70F (sliced). Facility has time holding procedures for these items posted but they were not currently being held on time control and did not have a time stamp. (2)In the breading prep cooler; prep cooler 1; and prep cooler 2; top portions of TCS food were holding above 41F (see temperature chart) due to clamshell lids being left open. (3)Boursin cheese (66F) found in prep cooler (double-panned) above 41F. Except during preparation; cooking; or cooling; or when TPHC is used TCS food shall be maintained at 41F or less. CDI- Cut tomatoes in ice bath were voluntarily discarded; lids on prep coolers were closed and observed food cooling down; and boursin cheese was voluntarily discarded.

3-501.18; Priority; Marinara in the walk-in cooler had a prep date of (9/7). Time/Temperature Control for Safety (TCS) food shall be discarded once it exceeds its date for time/temperature safety (7 days from preparation or opening if held at 41F or below). Remember that the prep date is Day 1. CDI- Marinara was voluntarily discarded. This was the only TCS food found holding longer than 7 days.

4-501.11; Core; There is ice build up around the freezer door inside walk-in cooler. In the walk-in freezer; there is also ice beginning to accumulate on the coil of evaporator unit and on the corner wall of unit. Equipment shall be maintained in a state of good repair. Chip away the ice and replace heat strip on door if needed so that the door may close completely.

Receptacles and waste handling units for refuse; recyclables; and returnables shall be kept covered with tight-fitting lids or doors if kept outside of the food establishment. Contact property management to have this receptacle repaired or replaced. Points may be assessed on future inspections if violation continues to occur. 5-501.115; Core; Shared outside dumpster receptacle with an accumulation of loose trash in dumpster enclosure. Enclosure observed with a significant amount of spilled grease and grease receptacle is heavily soiled.A storage area and enclosure for refuse; recyclables; or returnables shall be maintained clean. Work with neighboring restaurants to clean up excess litter and ensure facility's garbage is placed in receptacle. Points may be assessed on future inspections if violation continues to occur. 5-501.114; Core; Drain plug is missing on shared outside dumpster receptacle. Drains in receptacles and waste handling units for refuse; recyclables; and returnables shall have drain plugs in place. Please contact waste management to replace missing plug.
