3-501.16(A)(1); Priority; Bratwurst and hot dogs sitting stacked on top of one another were holding less than 135F (see temperature chart). Maintain TCS foods in hot holding at 135F or above. CDI- food items moved directly onto the heat surface to reheat to 165F.
