2-401.11(A); Core; Employees cups stored on prep surfaces did not have lids. Except when drinking from a closed beverage container; employees shall eat; drink; or use tobacco only in designated areas where the contamination of food; clean equipment and utensils can not result. CDI- PIC instructed employees to put lids on cups and move them to bottom shelving.

7-206.11; Priority; RAID for household use was found in the chemical storage area. Only pesticides with a manufacturer's label stating that it is approved for restaurant use shall be used in eating establishments. CDI- RAID was voluntarily discarded.

3-501.13(E); Core; Packages of tuna that were thawed in the seafood walk-in cooler were not slit. REDUCED OXYGEN PACKAGED FISH that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment or have oxygen introduced by slitting or poking a hole in the packaging. No points taken due to tuna in the grill/saute area having slits in the packaging.
