3-501.17(A)(B)(D) Ready-to-eat TCS food; date marking - (Pf) Except for shellstock; refrigerated; READY-TO-EAT; TCS FOOD prepared in house or opened from a commercial container (except deli salads; hard cheeses; cultured dairy; preserved fish; and cured/fermented meats) and held for more than 24 hours shall be clearly identified using a date marking system to indicate the day by which the FOOD shall be served or discarded for a maximum of 7 days. The day of preparation or open date shall be counted as Day 1. Facility is not date marking any TCS food items - numerous large bulk pans of food inside walk-in cooler and smaller portions inside reach-in coolers were observed without dates. CDI: Staff applied dates to all food items. Please ensure food is dated at the moment of preparation for accuracy.

3-501.19(A) If TPHC is used written procedures shall be prepared in advance; maintained in the FOOD ESTABLISHMENT and made available to the REGULATORY AUTHORITY upon request that specify the methods of compliance with TPHC and Cooling requirements. (Pf): Facility is operating their daily buffet under a 4 hour time hold from lunch at 11am to 1pm. In discussion with PIC it was reported that all food is discarded from the buffet and none is returned to the kitchen for further use. However; PIC stated they did not have the accompanying paper work as required by a time-holding procedure. CDI: EC Wall provided TPHC paperwork via email to facility management with instructions on how to fill out the forms and keep them available for further inspections. No points taken at this time.
