4.4(N) - VII. Protection from Contamination - Warewashing Equipment
A chemical sanitizer was unregistered, improperly used, or improperly produced. Sanitizer at 3-comp sink not set up at this location, this stand is serving mostly non-tcs foods so equipment is being cleaned at the main commissary kitchen. Please make sure sanitizer gets set up for wiping and cleaning dropped equipment.
Food was stored or handled in a way that could let germs or other material get into it, such as raw meat stored above ready-to-eat food or uncovered food. Cross-contamination is a common cause of foodborne illness.
