4.2(J) - Sanitizing solutions - Testing Devices
There is no test kit available for measuring the concentration of the sanitizer. No test kits available for measuring concentration of quaternary sanitizer for 3 compartment sink. Must have a method to accurately measure the concentration of chemical sanitizers to ensure they are at effective and safe levels.
Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.

Observed cut garnishes (limes, oranges, lemons) stored at the end of the bar in an area accessible to customers, posing a risk of contamination. Discussed with the Person in Charge (PIC) the importance of relocating the garnishes behind the bar or in a protected area to minimize potential contamination from customer contact.
