There is no test kit available for measuring the concentration of the sanitizer. No test kits available for measuring concentration of quaternary sanitizer tablets used in the three compartment sink. Must have a method to accurately measure the concentration of chemical sanitizers to ensure they are at effective and safe levels.
Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.
