TCS foods were being hot held at temperatures <135° F or a roast <130° F. Observed steamed hot dogs in hot holding at 117 degrees. Hot dogs must be held at 135 degrees or more. Hot dogs are getting reheated on grill after. PIC made adjustment to holding equipment.
