3.4(C) - Thawing TCS
TCS food was improperly thawed. Observed sausages, cooked eggs, etc sitting at room temperature. Items should be kept frozen and directly cooked in oven. Boxes say keep frozen.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Plumbing system is not maintained in good repair. Hot water valve on 3-comp sink needs to be repaired so you can turn the water off without turning off the valve for the faucet. Hot water is always running if faucet valve is on.
The business had issues with hot or cold running water, plumbing, drains, backflow prevention, or sewage disposal. Some of these, like no hot water, can force a temporary closure until fixed.
