4.5(D) - Nonfood-contact surfaces - cleaning frequency
Nonfood-contact surfaces are not cleaned frequently enough. 1. Dust accumulation was observed on racks used for storing clean equipment. These racks must be cleaned to maintain proper sanitation. 2. Observed biofilm growth inside one of the soda gun nozzle and in the drip guards. Must be cleaned more thoroughly. 3. Observed debris and dust accumulation on the floors throughout the facility including the basement. Must be cleaned to maintain proper sanitation.
Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.

Handwashing sink does not provide water at least 85° F. No warm water available for handwashing in the men and women bathrooms. Must have handwashing sinks able to provide water at a temperature of at least 85°F (29.4°C) for proper handwashing. Hot water was available for the handwashing stations behind the bar and in the basement.
Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.

Food is stored unwrapped or in uncovered containers. Observed under-bar ice bins not covered. When not in active use, ice bins must be covered to prevent contamination from dust, debris, and other sources. Proper covering or storage of ice is required to maintain compliance.
Food was stored or handled in a way that could let germs or other material get into it, such as raw meat stored above ready-to-eat food or uncovered food. Cross-contamination is a common cause of foodborne illness.

Handwashing facility is being used for purposes other than handwashing. Observed containers on top of multiple hand sinks. Must keep hand sinks cleared so they are easily accessible.
