The light intensity was <10 foot candles at 30 inches above the floor, in walk-in refrigerators, dry food storage areas, or in other areas during cleaning periods. Walk in cooler appeared very dim.

Inspector’s notes
TCS foods were being held at temperatures >41° F. Observed cheese sauce and beef holding at 45ºF for less than 4 hours per PIC and food employee. TCS products were placed on ice and PIC said refrigeration repair technician was contacted to come out right away.
