4.2(A) - VI. Time/Temperature Controlled Safety Food - Equipment - Cooling, Heating, and Cooling Capacities
There is not adequate equipment for cooling, heating or holding food. Observed kitchen block coolers holding ambient temperatures >45F. Coolers observed with no lids and bagged ice placed over various TCS food items. PIC indicated equipment has been serviced since opening. Provide necessary repairs and maintain equipment in good repair and/or replace equipment. Supplemental mechanical refrigeration to be used interimly. PIC indicated request for new equipment would be placed with ownership.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
