Food facility is using time as a public health control (TPHC) for tapioca/boba and sushi rice; however, written procedures were not available during the time of the inspection, and sushi rice was observed without a sticker recording the time. [CA] When time only is being used as a means for controlling the safety of potentially hazardous foods, the food shall be time-marked to indicate when it has been outside of temperature control for 4 hours, and written procedures that ensure compliance with these requirements shall be maintained in the facility.
