Observed pooled eggs stored on prep table measuring at 51 *F without any active temperature control. Operator put pooled eggs in new ice bath in larger bowl. All PHF shall be maintained at 41*F and below or 135 *F and above. Do not store any PHF at room temperature without active temperature control.
