Observed vacuum sealer and vacuum sealed food items. Operator could not provide a HAACP plan at the time of inspection. Discarded roughly around 420 lbs of vacuum sealed foods that included chicken stew, pork stew, duck stew, beef stew, quinoa, corn puree, squid, octopus and beef. Special processes such as vacuum sealing require HAACP plan approval from state. Discontinue vacuum sealing and submit for HAACP plan reviewal

Mechanical dishwasher at the bar reading 0ppm sanitizer. Food contact surfaces must be clean and sanitized. 3-comp sink at the bar set up for use. Email a video to inspector of dishwasher reading 50ppm chlorine within 24 hour to avoid a reinspection and further enforcement.
