Observed eggs and potatoes out at 53 *F, batter left out at 48 *F and pooled eggs on cutting board left out at 58 *F. Tomatoes measured at 51 *F and filled above fill line. All potentially hazardous foods shall be stored at 41 *F or below. Discontinue leaving PHF out at room temperature when not in use and store in refrigeration. Provide ice bath for pooled eggs and batter if storing outside refrigeration. Do not store foods in prep table refrigerator above fill lines.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Observed wiping cloths in use on cutting boards at time of inspection. Keep cloths in sanitizer bucket when not in use. These were moved to a bucket. Corrected on site.
