Observed hot water temperature to be at 102F (maximum). Water heater adjusted on site. Final water temperature observed to be above 120F. Corrected on site.

In the cold holding unit inserts, American cheese internal temperature readings were measured at 51F, and 50F, cheddar cheese at 49F, pepperjack cheese at 47F, provolone cheese at 50F, and sausages at 49F and 48F. Potato salad internal temperature readings were at 47F and 48F. [Corrective action] Potentially hazardous foods shall be held at or below 41 °F or at or above 135 °F. [Corrected on site] The food items mentioned above were used within 40 minutes.
