Observe open top refrigeration unit table holding at 49 - 50*F. Drawer internal temp measured at 46 *F and 50*F in open top unit. All cold holding refrigeration for PHF shall be held at 41 *F or below. Operator advised to move all food to working units, limit available items on menu and discontinue use of unit until repaired to hold at 41 *F or below. Send picture to district inspector verifying repairs.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
