Observed creamer at self serve area of coffee car at 45 *F. All potentially hazardous foods must e at 41 *F and below or 135 *F and above.

Observed custard donuts on the counter at room temperature. Per time monitoring chart, discard time id 1:00 p.m.. All potentially hazardous foods that are held at room temperature and use time as a public health control measure shall be sold or discarded within four hours.Custard donuts voluntarily discarded. Creme brulee donuts contain custard and were voluntarily discarded. 33 donuts in total voluntarily discarded. Discussed using refrigeration to hold donuts with potentially hazardous foods with employee on site and manager via phone. Observed strawberry shortcake donuts at room temperature. Per manager, filling is a non-dairy product. Submit the label of the non-dairy filling.

2nd reinspection conducted today. Cost recovery fees will be charged for this second reinspection and all additional reinspections. Cost recovery fee is $207.00 per hour. See case # 16783.

Observed 10 cream cheese donuts on the counter. Only one employee at the facility. Employee arrived at 10:30 a.m. and these donuts were already on the counter. Spoke to Aya on the phone. Per Aya, cream cheese donuts need to be discarded by 1:00 p.m.. Employee discarded 10 donuts into compost container. If using time as a public health control measure, maintain written procedures and clearly indicate date and time potentially hazardous food shall be discarded. Submit copy of written procedure by 3/21/24.
