Observed cooked boba stored at room temperature without any temperature control. Operator states boba is cooled before being stored in refrigerated prep table for holding. No cooling logs or records available and boba measured at 75 *F. Foods must be cooled from 135 - 70 within 2 hours and 70 - 41 within 4 hours. Provide proper logs and records for cooling processes.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
