Refrigerated prep table at salad making station ambient temperature at bottom measured at 50*F. Internal temperature of cooked tomatoes at 55.3*F and sliced tomatoes at 53 *F. Operator instructed to move all PHF in fridge to walk-in. Discontinue using until repaired to hold at 41 *F or below. Submit new equipment application and pay review fee if replacing.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Observed glasses go through the dishwasher reading 0ppm sanitizer solution. Food contact surfaces must be clean and sanitized. Company has been called and is going to complete the problem within 30 minutes. Record a video of running the dishwasher and testing the sanitizer and email it to inspector within 1 hour.
