Individually wrapped .53 oz. of Ewephoria sheep cheese observed with temperatures of 51.3 - 54 degrees F with infrared thermometer. Truffle Noire .53 oz. Gouda with Trulles observed at 51.7 - 57 degrees F with infrared thermometer. 24 Ewephoria sheep cheese and 40 Truffle Noire voluntarily discarded into compost container. Maintain potentially hazardous foods at or below 41 degrees F. Thermometer in this unit: 48 degrees F. Adjust unit colder.
