Observed hot holding unit holding foods at 115-125 F. Potentially hazardous foods must be hot held at 135 F or above. Food received at 9:45am. Food labeled to be discarded using time as a public health control at 12:45. repair unit to hold at 135 F. Replace unit if it will not function properly. Ensure there is a backup plan to feed the school if unit stops functioning.
