Observed employee washing cutting board in 3 compartment sink and skip the sanitization step. Instructed employee to properly set up 3 compartment sink but was unable to demonstrate knowledge. Provided education material about ware washing procedures. Ensure employee are retrained properly on proper ware washing procedures.
No violations were found at the time of re-inspection and major violations corrected. A green placard was issued.
Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.
