Measured red curry in reach refrigerator measured at 51 *F. Operator stated curry's were cooked the night before. About 1 gallon of red curry was voluntarily discarded by operator. Operator instructed on proper cooling procedure for curry and recommended using ice baths as additional cooling method.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
