Observed operator washing and scrubbing strainer used for preparation of raw chicken in food preparation sink without proper sanitization step. Manual warewashing shall be completed using final sanitization step after immersion in sanitizer. Discontinue washing equipment in food preparation sink and carry out proper manual warewashing procedures of wash > rinse > sanitize > air dry.

Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.
