Chorizo burrito: 133 degrees F. Maintain hot foods at 135 degrees F or hotter. Half and half, whole milk, and nonfat milk all 50 degrees F. 1gallon of half and half, 1 gallon milk plus ~ 1/4 cup of whole milk, and half gallon of nonfat milk voluntarily discarded into the three-compartment sink. Maintain open containers of dairy at 41 degrees F or colder and unopened containers of dairy at 45 degrees F or colder.
