Pork left on counter to cool was covered and sitting on food prep table. Pork recorded at 137°F at time of inspection. / Discontinue cooling method. Do not leave food covered when cooling. Setup ice baths or put shredded pork onto baking sheets to cool food from 135-70°F in 2 hours then place food in walk-in, still uncovered and on shallow baking trays, in walk-in refrigerator to cool from 70-41°F in 4 hours thereafter for a total of 6 hours. See issued cooling handout.

Old thermometer reads 40°F. / Discontinue use of said refrigerator until repaired to cold hold food at 41°F or below. Discard out of temperature foods. Replace thermometer.
