Observed sealed deli chorizo measuring an internal temperature of 44 F in door 1 of six door reach in refrigerator. Ambient temperature of unit measured 44-47 F. Ensure all potentially hazardous foods are cold held at 41 F or below or hot held at 135 F or above. All potentially hazardous foods relocated to a different unit measuring below 41 F. Service 6 door reach in refrigerator immediately to cold hold at 41 F or below. Do not store any potentially hazardous foods in unit until repaired.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
