Observed open top refrigerated prep unit unplugged at the time of inspection. Ambient temperature measuring at 52.6 *F and 55 *F for top and bottom respectively. All potentially hazardous food measuring 50 *F or greater were voluntarily discarded by operator. All potentially hazardous food shall be held at 41 *F or below. Operator plugged unit back in and ambient temperature measured at 37 *F. Ensure refrigerated prep unit is plugged in at all times.
