Cooling of cooked beef and chicken was observed being done in plastic soup containers and measured internal temperature of 122 *F and 102. F. Foods must be rapidly cooled from 135 - 70 *F within 2 hours and 70 *F - 41 *F in 4 hours under active cooling procedure. Operator separated beef into smaller containers and returned to refrigeration uncovered.
