Potentially hazardous foods (PHFs) (e.g. dry batter mix with raw chicken residue) shall be maintained under proper time or temperature parameters at all times. Per employee, the dry mix was prepared and just used 30 minutes prior. Mix was relocated to walk-in refrigerator at time of visit.

Ensure lamps can maintain heat. Items were taken to oven to be reheated. Observed cooked potatoes at 114-146F in steam table. Potatoes at front of steam table were not staying above 135F. these were taken to the oven to reheat. Observed sprouts at 49F in bag stacked on top of prep top. Store food below fill line in prep top pans.
