Observed croissant with cheese in glass bakery case at 68 degrees F and croissants filled with pastry cream and strawberries at 67 degrees F in this case. Croissant with cheese is for display only. Chicken is added to croissants with cheese, one croissant with cheese an be kept out for display if sign is posted for display only. Per manager, time as a public health control is being utilized for strawberry and pastry cream croissants. Strawberry and pastry cream croissants finished being assembled at 11:30 a.m., per manager. When using time only as a public health control, each food container must be clearly marked to indicate the exact time that is four hours past the time in which the food is removed from temperature control potentially hazardous foods shall be sold or discarded within four hours from when it is removed from temperature control. Time as a public health control (TPHC) Guidelines/written procedures document provided. Submit written procedures for all potentially hazardous foods that utilize T.P.H.C.. 3 strawberry and pastry cream croissants voluntarily discarded at 3:29 p.m.. Observed open container of whole milk with internal temperature of 57 degrees F in hotel without ice. Maintain open containers of dairy at or below 41 degrees F. ~ 2 cups voluntarily discarded down the drain.
