Duck confit observed holding in reduced-oxygen packaging (ROP) in walk-in cooler. Per staff, item has been holding in walk-in for approximately (1) month. All potentially hazardous foods (PHFs) undergoing and holding under reduced-oxygen packaging shall have an approved hazard analysis critical control point (HACCP) plan approved by the California Department of Public Health (CDPH). Item discarded at time of visit.
