Observed cooked eggs on food preparation table stored at ambient temperature measuring at 86.5 *F. Operator stated eggs were cooked about an hour ago. All PHF shall be stored 41 *F and below or 135*F and above when not in active preparation. Operator moved eggs to refrigeration. Discontinue storing PHF at ambient temperatures when not in use or preparation.

In the cold holding inserts, turkey internal temperature readings were 53F, American cheeses were 54F, and sausages were 53F. In addition, non-dairy coffee cream was observed at ambient temperature on the front counter. The internal temperature reading was 58 °F. [CA] Potentially hazardous foods shall be held at or below 41 °F or at or above 135 °F when hot. (COS) The owner transferred all foods mentioned above into the reach-in unit, and the non-dairy coffee cream was voluntarily discarded.
