Observed sausage patties measured at 120-123 degrees F in hot holding unit. Observed almond milk opened adjacent to coffee station measuring at 63 degrees F. Potentially hazardous foods shall be held at or below 41 degrees F or at or above 135 degrees F. Almond milk voluntarily discarded by employee (3/4 of 1 qt.). Employee stated sausage patties were placed in hot holding unit about half hour ago. Sausage patties reheated in oven before returned to hot holding unit. Ensure temperatures of all foods are checked with probe thermometer.
