Two door Delfield refrigerator by server station: Observed potentially hazardous foods at 48 - 54 degrees F. Raita (48 degrees F) was made today at 2:00 p.m., per PIC. Raita moved to two door Traulsen refrigerator. Open container of whole milk: 51 degrees F, rice pudding: 52 degrees F, and 8 oz. container of raita (54 degrees F) were voluntarily discarded. Also in this refrigerator: mango latte: (54 degrees F) - voluntarily discarded. Remove all potentially hazardous foods from this unit. Discontinue using this unit until unit has been repaired. Repair unit so it is capable of maintaining potentially hazardous foods at or below 41 degrees F. Prep refrigerator: lower portion: heavy cream: 48 degrees F, gravy: 48 degrees F, raw chicken with marinade: 48 degrees F. Thermostat is set at 6.5 and max is 7. Repair refrigerator, so it maintains potentially hazardous foods at 41 degrees F or colder. Upper portion of unit: raw fish in two insert pans, below 41 degrees F. However, both had ice in them. Unit shall work properly without ice. Walk-in refrigerator: pakora: 47 degrees F, samosa: 48 degrees F. mixed cooked veggies: 45 degrees F, cooked chicken curry: 47 degrees F, raw chicken: 47 degrees F. Thermometer inside unit by the door: 48 degrees F. Repair unit so it is maintaining potentially hazardous foods at or below 41 degrees F. Also in walk-in refrigerator: tandoori chicken: 47 degrees F, masala, 46 degrees F, whole shell eggs: 47 degrees F. Masala sauce finished cooking at 10:30 a.m.. Veggie samosa: 47 degrees F. Potentially hazardous foods in the walk-in refrigerator ranged from 45 - 48 degrees F. Only thing prepared today that is in the walk-in refrigerator is the masala. Facility was closed yesterday. Recommend discarding potentially hazardous foods that are above 41 degrees F. Refrigerators at this facility are not working adequately. Keep refrigerator doors closed.
