Observed chicken tonkatsu at 78 F on shelf above display cooler. Observed other foods such as spam and chicken kara-age on shelf above display cooler at 78-81 F. Ensure all potentially hazardous foods are cold held at 41 F or below. Per person in charge, foods were brought over from their market on 4th St at 10:30 AM. Instructed employee to relocate foods from on top of shelf into a refrigeration unit. Repeat violation. If violation persists, a case will be opened and cost recovery fees apply.
