0 ppm chlorine sanitizer measured in automatic dishwasher at time of inspection. Sanitizer hose was disconnected from sanitizer bucket. Chlorine must measure minimum 50 ppm for automatic dishwashers. Ensure dishwasher is checked daily to ensure sanitizer is being dispensed properly.

Observed the following items at the following temperatures in food prep area and behind the cook line. Egg noodles at 65* F, Bag of tofu at 62*F, Rice noodles at 68*F, bean sprouts at 68*F and garlic in oil at 82*F. All potentially hazardous food shall be stored at 41 *F or below or 135*F and above. Operator instructed to ensure items stored in ice bath if not enough refrigeration space.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
