Marinara sauce in refrigerator recorded at 48°F at center. Sauce was prepared yesterday. / Discard improperly cooled food. Food must be rapidly cooled from 135-70°F in 2 hours then 70-41°F in 4 hours thereafter. Discussed cooling using ice bath and ice wand with chef.
