Observed cooked inions/ shallots stored at room temperature measuring at 87 *F and cooked artichokes stored next to grill measuring at 67 *F. Both foods were stored without any active temperature control. All PHF must be stored at 135 *F and above or 41*F and below. Do not store PHF foods at room temperatures without any form of temperature control.
