Observed 6 sausages and 1 sausage patty measured at 62 *F on rack under heating lamp. Sausages were prepared roughly around 8:30 AM. Operator voluntarily discarded noted food items. Operator stated that sausages will only be cook to order for future servicing as alternative to hot holding.
