Observed cheese deli slices stacked above fill line in inserts of refrigerated prep table measuring internal temperature of 52 *F. All potentially hazardous foods shall be kept at 41 *F and below. Slices were prepared earlier in the morning and cheese slices above fill line were returned to refrigeration. Discontinue storing any foods above the fill lines of containers.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
