Pasta marinara sauce in walkin refrigerator stored in large plastic containers recorded at 51 and 52 *F. Operator stated that sauce was prepared this morning at 7:00 AM. Operator instructed to begin cooling sauces down to 41 *F utilizing an ice batch and ice wands. Reviewed cooling procedures with operator to train employees. Sauce was measured again after cooling process began and measured at 42 and 43 *F
