Observed several breakfast items in hot holding steam table measured internal temperatures less than 135 *F. All PHF must be held at 135 *F and above or 41*F and below. Operator stated that the foods were prepared at around 7 AM. Noted foods were reheated to 165 *F or greater. Recommend checking temperatures at least twice throughout breakfast service to ensure proper holding temperatures.
