Metal hotel pans observed at cook's line observed in use to portion brown rice. Prior to portioning cooked rice into hotel pan, observed accumulation of debris inside metal hotel pan. Employee was stopped and notified at time of inspection. Hotel pan was removed from service and replaced with clean tray/hotel pan. All utensils shall be maintained clean to sight and touch. All utensils that shall be used for service shall be properly cleaned and sanitized.
