Observed cooked boba stored on top of reach in refrigerator at room temperature without any temperature control. All potentially hazardous foods shall be held at 41*f and below or 135 *F and above. Operator states boba was cooled after removing from stove. Discontinue storing boba at room temperature. Boba must be transferred to steam table unit after finished cooking for hot holding.
