Observed open container of heavy cream with internal temperature of 56 degrees F sitting on top of ice. Container is labeled '2-6'. Per Philz operating procedures document, goal is to keep dairy products at a temperature of at or below 41 degrees F. Keep containers of dairy submerged in ice. this is noted on the dairy protocol in Retail Stores document under Note 1. Open container of half full. Maintain open containers of dairy at or below 41 degrees F. 2nd open container of heavy cream on top of ice measured 53 degrees F - this container is marked 11:50 - 15:50 and is ` 2/3 full. ~ 1/2 gallon and 2 cups of heavy cream voluntarily discarded down the drain. Corrected at inspection.

Two heavy cream containers at 59 degrees F and 60 degrees F. Both dated close Both voluntarily discarded. Per Philz Coffee written procedure from 20/2/17; all dairy products stored in ice caddies on brew stations are to be dated with the time the container was removed out of refrigeration. The time will be written on the container, per policy. Follow written policy, or keep all open containers of dairy at 41 degrees F or colder in refrigeration. Heavy cream was voluntarily discarded down the drain.
