Facility was observed to vacuum sealing potentially hazardous food without an approved HAACP plan or certification from CDPH and identified vacuum sealer in back kitchen area by prep stations. A facility must have an approved HAACP plan from California Dept of Public Health. Facility shall discontinue any vacuum sealing or production of reduced oxygen packaging foods. Facility shall also remove any vacuum sealing equipment until approved. All vacuum sealed foods packaged on site at the facility were voluntarily discarded by the operator.
